OHV V8 sat all winter inside on a concrete floor, no heat.  Started it right up this morning.

After ten minutes (maybe less) smoke started rolling out the exhaust.

As it continued to run (fast idle) the smoke diminished and finally stopped.

Temp was at 180 by then.

Gotta be valve stems?

Probably condensation (water) in the muffler being turned to steam as the muffler got hot. As the engine continued to run all the water evaporated and the "smoke" disappeared.

Did it smell of burning oil?

Key question.   Also air temp when this occurred. Color will tell whether it was oil, condensation or???

Depends on the V8, SBC are notorious for the factory style valve guide seals to be junk and do exactly what you are seeing.
