Wife has the menu planned out...we have hopefully plenty on hand...Lou bring some sodas...the vegiterians have a special treat in store also..Mums makes excellent buffalo wings for we the carnavoires..got potato salad and my recipe of baked beans...(two pots, jalapeno for the daring and without for the mild mannered types) has the makings for a good day, wishing eveyone travel mercies and may mother nature smile on us in a favorable manner... T120 Posted April 8, 2011 Report Posted April 8, 2011 Sounds like your baked bean recipe for the more daring may rival the infamous "Cowboy Bubblebath" recipe 1 lb. bacon 3 jalapeno peppers, finely chopped 1 each green, red, yellow bell peppers, chopped 2 large white onions, chopped 2 (15 oz.) cans white beans 2 (15 oz.) cans kidney beans 2 (15 oz.) cans black beans 1 (15 oz.) can garbanzo beans 1/2 cup dark molasses 1 tbsp. liquid smoke 1 tbsp. onion powder salt and pepper to taste Crisp bacon in deep skillet. Crumble and set aside. Pour off excess fat and lightly fry all peppers and onion in about 2 tablespoons bacon drippings. Partially drain all beans. Save liquid. Combine all ingredients in deep roaster. At this point, you can set the whole thing aside overnight if you wish. Bake for 3 hours at 350°. Add some of the reserved bean juice if the pot gets too dry. Plymouthy Adams Posted April 9, 2011 Author Report Posted April 9, 2011 TEXAS CAVIAR 2 cans Blackeyed Peas : rinse and drain 1 Bell Pepper: chopped 2 cans Shoepeg Corn, drain Small bottle of Italian Dressing 1 Jalapeno Pepper : remove seeds and chop 1bunch Green Onions : chopped tops included Parsley or Cilantro chopped (to taste) 1 large Tomato: diced Mix and chill , preferably over night. Serve with corn chips. *Additional jalapeno peppers or juice from a jar of Jalapenos may be added for extra zip. Quote
