Tim, sure sounds good. As you say, wonder how pumpkin got involved. I got a pumpkin you can have but if there is any rolling done it might get flattened but it sure would save the use of the rolling pin.

My wife has been making the pumpkin rolls for years. She does use pumpkin in her's though and a few more spices.

3 Eggs

1 Cup sugar

2/3 Cup Pumpkin

1 tsp Lemon Juice

¾ cup flour

1 tsp Baking Powder

2 tsp cinnamon

1 tsp Ginger

1/2 tsp Nutmeg

1/2 tsp Salt

1 Cup chopped Pecans

1 cup powdered sugar

8 oz cream cheese

4 Tbsp Butter

½ tsp vanilla

She like John uses a dish towel and sprinkles powdered sugar on the towel before turning the cake out onto it.

I am not a pumpkin eater at all, but have to admit these are good. Eat more than my fair share every year.
