I see Fatman has a rack and pinion set up for these Plymouths for $265...Has anyone installed one ?  Would you recommend it ?

Doing one currently.  Just started so I'm looking for info as well,  I do have a thread started so check it out.

Would you suggest someone else that makes the kit ?

I used the fatman kit in my 50 Suburban. I highly recommend it. Keep in mind that you still have to make the parts fit and add rack mounting holes to the brackets.  As with all projects some assembly is required.

Hello Don, did you receive any guidance from FatMan?    Did you have to add a power steering pump to it?

I added a Power steering pump because I put in a power rack. I don't think your can get a manual Cavalier rack. I did send Fatman pictures of the inital set up to assure myself the tie rod angle was good to the lower control arm angle. They agreed that I was on the right track!

I have a manual rack for a Cavalier. However, It has a different input spline than the power rack and is approx. 2 inches shorter on the passenger side. I did have it installed on my 48 Ply. coupe but, I have a 354 hemi in it and the manual rack didn't like the weight of the engine so I went with a power rack. 

As a side note, the Cavalier rack offers at least (2) different steering ratios and believe me you don't want the "sport" steering because it's the fast ratio. Also, I have pictures and drawings of my installation and parts that I made if you're interested.
