You need residual pressure in the system to help keep the wheel cylinder cups expanded so they don't leak. If the cups don't seal tight against the bore, air will get past them into the cylinder. It used to be that when you parked a car for a long time, you would disconnect the battery and put a stick between the brake pedal and the front seat to keep pressure in the cylinders.

The purpose of the check valve in MC is to prevent brake fluid gravity seepage during brake bleeding. Otherwise, it does not participate in any way in brake operation.
