I'm looking to swap the 6 cylinder engine in my 59 dodge d100 and keep my 3 speed manual transmission what are my options as far as more power 8 cylinder engines

The 59 L6 likely has the dual pattern bellhousing...fits L6 block as well as the EarlyHemi, Hemi-based Poly and A series Poly blocks. These are all pre-62 engines. The 62 model year saw changes in block bolt pattern as well as crankshaft flange design.

The flywheel will also interchange.  The EarlyHemi excludes the 51-53 331 Chrysler, otherwise all of the Dodge, DeSoto and 54-58 Chrysler including the Spitfire-Poly, the Industrials, and the trucks.

Given the relative age of all these possibilities you will be fortunate if you find something decent not needing a rebuild. However, there is no shortage of 'projects' that someone gave up on due to cost or availability of parts.
